Chocolate-Chocolate Chip Espresso Cookies

  • baking powder

  • brown sugar

  • chocolate chips & chunks

  • cornstarch

  • espresso grounds

  • flour

  • maple syrup

  • vanilla extract

  • white sugar

    In a large bowl, cream together butter and brown sugar .
    butter: 1 c, brown sugar: 1.5 c

    Cream together white sugar .
    white sugar: 1/2 c

    Stir in vanilla extract and eggs .
    vanilla extract: 1 t, eggs: 2

    Then add maple syrup .
    maple syrup: 4 tbsp

    Add in espresso grounds and cocoa powder and mix thoroughly.
    espresso grounds: 2 Tbsp, cocoa powder: 1/2 c

    Add in cornstarch , baking powder , and salt .
    cornstarch: 2 t, baking powder: 1 Tbsp, salt: 2 t

    Add flour in 2-3 batches, stirring until fully combined.

    Stir in chocolate chips & chunks .
    chocolate chips & chunks: 2 c

    Chill for at least 30 minutes.

    They're better if you let them chill overnight though before baking.

    I use a 1/4 cup to measure the cookies out, and spread them out generously.

    They don't spread much, but it messes with the outside consistency if they run into each other when baking.

    Bake at 325 for about ⏱️ 15 minutes until the middle of the cookies do not look wet, but not any longer.
