Chocolate-Chocolate Chip Espresso Cookies

white sugar1/2 c

1In a large bowl, cream together butter and brown sugar .butter: 1 c, brown sugar: 1.5 c

2Cream together white sugar .white sugar: 1/2 c

3Stir in vanilla extract and eggs .vanilla extract: 1 t, eggs: 2

4Then add maple syrup .maple syrup: 4 tbsp

5Add in espresso grounds and cocoa powder and mix thoroughly.espresso grounds: 2 Tbsp, cocoa powder: 1/2 c

6Add in cornstarch , baking powder , and salt .cornstarch: 2 t, baking powder: 1 Tbsp, salt: 2 t

7Add flour in 2-3 batches, stirring until fully combined.flour: 3 c

8Stir in chocolate chips & chunks .chocolate chips & chunks: 2 c

9Chill for at least 30 minutes.

10They're better if you let them chill overnight though before baking.

11I use a 1/4 cup to measure the cookies out, and spread them out generously.

12They don't spread much, but it messes with the outside consistency if they run into each other when baking.

13Bake at 325 for about ⏱️ 15 minutes until the middle of the cookies do not look wet, but not any longer.
